Available in several models, it forms dough disks up to 52 cm in diameter. With electronic control over plate temperature and contact time, the Pizzaform® is designed for pizzerias seeking significant time savings, strong consistency, and high output during busy periods.
The Pizzaform® stands apart from conventional sheeters through its hot-pressing principle. Where a traditional sheeter stretches dough using rollers, the Pizzaform® uses heated plates with electronically controlled temperature and contact time. This process produces consistent dough disks at the desired diameter, with controlled thickness.
The specially shaped plates preserve the pizza's traditional rim, avoiding a disk that's too flat or overly compressed. The controlled heat also creates a thin layer of starch gel on the surface of the dough, which helps retain gas and promotes more even baking in the oven.
With a capacity of up to 400 pizzas per hour, the Cuppone Pizzaform® is especially well suited to pizzerias that need to quickly produce consistent pizza bases while reducing fatigue and the repetitive movements involved in manual shaping.
