The ovens in Izzo’s historic range have been developed to deliver exceptional robustness and outstanding durability. Their particularly solid construction allows them to maintain their performance and reliability even after many years of intensive use in demanding professional environments.
Thanks to the different cooking chamber configurations available, these ovens are suitable for a wide variety of applications: pizzas baked directly on the oven floor, tray pizzas, rotisserie products, bakery specialities and pastry preparations.
In addition to the traditional stainless-steel version, particularly suitable for production kitchens and laboratories, this range is also available with several carefully designed aesthetic finishes. Decorative elements, hand-engraved copper logos and exclusive colours can transform the oven into a genuine design feature, enhancing the space in which it is installed while retaining all its professional performance.

By using 8 centimetres of refractory bricks between the base and the top of the cooking chamber, Izzo ovens achieve a level of thermal inertia that is unmatched in the professional electric oven market.

Authentic traditional Neapolitan pizza cooks in approximately 60 seconds, at a temperature close to 450°C. So-called contemporary pizza generally requires a cooking temperature of around 400°C, while pan pizza is usually baked at approximately 300°C.

The graph below illustrates the gradual decrease in temperature after the oven has been switched off. Even after 10 hours, the oven still retains a temperature of approximately 220°C. When it is switched back on, the oven is therefore already at a high temperature, helping to achieve significant energy savings.
